Ingredients
- 1 Tbsp (15 ml) butter
- 1 Tbsp (15 ml) extra virgin olive oil
- 1 Tbsp (15 ml) steak spice
- 7 to 9 oz (200 to 250 g) buffalo flank steak
- 3 slices bacon, diced
- 1/2 large Spanish onion, minced
- 2 cloves garlic, crushed
- 1/2 cup (125 ml) red beer
- 1 Tbsp (15 ml) Worcestershire sauce
- 1 1/2 cups (375 ml) Canabec veal or game demi-glace
- 3 sprigs fresh rosemary
- Salt & pepper to taste
Instructions
- Melt the butter in the oil in a large skillet.
- Season the flanks with steak spice and sear individually over high heat for 4 minutes per side. Place in a slow cooker.
- In the same skillet, brown the chopped bacon. Add the onion and cook for about 15 minutes over medium heat. Season with salt & pepper.
- Add the garlic and cook for another 2 minutes. Deglaze with the beer and reduce for 3 minutes. Pour over the flank steaks.
- Add the Worcestershire sauce, demi-glace and rosemary.
- Cook in the slow cooker for 7 hours at medium heat.
