Sliced Ostrich with Field Berries

Ingredients
400 g roast ostrich
2 Tbsp (25 g) butter
Pinch salt
2 Tbsp (25 ml) raspberry vinegar
1/2 cup (70 g) raspberries
1/4 cup (35 g) strawberries, chopped
1/3 cup (35 g) blueberries
2 Tbsp (25 g) sugar
1 1/4 cup (300 ml) Canabec Game Demi-Glace
1/4 cup (60 ml) 35% cream
Salt & ground pepper to taste
Instructions
Sauce:
Melt the butter in a medium saucepan over low heat. Add the sugar and stir until melted.
Add the vinegar and fruit and reduce until the sauce has thickened.
Stir in the demi-glace and cream. Bring to a boil and season to taste.
Set aside and keep warm.
Meat:
Preheat the oven to 350°F (175°C). Sear the roast and bake in the oven for 10 to 15 minutes to an internal temperature of 136°F (58°C) for medium.
Slice the roast and place on a serving dish. Spoon the sauce over top.
Garnish with fresh raspberries and serve.
