Roast Quail with Fruit and Port Sauce

Ingredients

  • 6 quails
  • 2 onions, peeled and finely chopped
  • 15 dates, cut in half
  • 3/4 cup (70 g) shelled pistachios, crushed
  • 3 Tbsp (45 ml) pine nuts
  • 1 tsp (5 ml) cinnamon powder
  • 1/2 cup (125 ml) Port
  • Salt & ground pepper to taste

Instructions

  1. Brown the onions in a large frying pan with a splash of olive oil.
  2. Add the quails and brown on all sides.
  3. Add the dried fruit and cinnamon. Wet with 1 1/4 cups (300 ml) of water and cook for 15 minutes, covered.
  4. Deglaze with the Port and reduce over high heat.
