Roast Quail with Fruit and Port Sauce

Ingredients
6 quails
2 onions, peeled and finely chopped
15 dates, cut in half
3/4 cup (70 g) shelled pistachios, crushed
3 Tbsp (45 ml) pine nuts
1 tsp (5 ml) cinnamon powder
1/2 cup (125 ml) Port
Salt & ground pepper to taste
Instructions
Brown the onions in a large frying pan with a splash of olive oil.
Add the quails and brown on all sides.
Add the dried fruit and cinnamon. Wet with 1 1/4 cups (300 ml) of water and cook for 15 minutes, covered.
Deglaze with the Port and reduce over high heat.
