Bison Taco-Style Salad

Ingredients

  • 1 package Canabec Bison Burger
  • 1 small onion, chopped
  • 1 garlic clove, chopped
  • 1/2 cup (125 ml) kernel corn
  • 1/2 green pepper, finely chopped
  • 1 Tbsp (15 ml) chili powder
  • 1 tsp (5 ml) ground cumin seeds
  • 1/4 tsp (1 ml) salt & pepper
  • 1/2 cup (125 ml) tomato salsa
  • 1 cup (250 ml) Monterey Jack cheese, grated
  • 1 romaine lettuce, shredded
  • 1 cup (250 ml) grape tomatoes, halved
  • A few corn chips
  • Light sour cream

Instructions

  1. Heat a large non-stick saucepan over medium-high heat.
  2. Add the ground bison, onion and garlic, and cook for about 7 minutes, breaking up the bison meat with a spoon.
  3. Stir in the corn kernels, green pepper, chili powder, cumin, salt & pepper and cook for another 1 to 2 minutes. Add the salsa and cook another minute.
  4. Remove the bison mixture from the heat and stir in half of the grated cheese.
  5. Meanwhile, make a bed of corn chips and romaine lettuce on each plate.
  6. Top with the bison mixture and scatter the tomatoes and remaining cheese over top.
  7. Garnish with a dollop of sour cream and serve.
