Bison Taco-Style Salad

Ingredients
1 package Canabec Bison Burger
1 small onion, chopped
1 garlic clove, chopped
1/2 cup (125 ml) kernel corn
1/2 green pepper, finely chopped
1 Tbsp (15 ml) chili powder
1 tsp (5 ml) ground cumin seeds
1/4 tsp (1 ml) salt & pepper
1/2 cup (125 ml) tomato salsa
1 cup (250 ml) Monterey Jack cheese, grated
1 romaine lettuce, shredded
1 cup (250 ml) grape tomatoes, halved
A few corn chips
Light sour cream
Instructions
Heat a large non-stick saucepan over medium-high heat.
Add the ground bison, onion and garlic, and cook for about 7 minutes, breaking up the bison meat with a spoon.
Stir in the corn kernels, green pepper, chili powder, cumin, salt & pepper and cook for another 1 to 2 minutes. Add the salsa and cook another minute.
Remove the bison mixture from the heat and stir in half of the grated cheese.
Meanwhile, make a bed of corn chips and romaine lettuce on each plate.
Top with the bison mixture and scatter the tomatoes and remaining cheese over top.
Garnish with a dollop of sour cream and serve.
