Seared Bison in Zucchini Tians

Ingredients

  • 4 (480 g) bison medallions
  • 12 large slices (200 g) green zucchini
  • 12 large slices (200 g) yellow zucchini
  • 12 large slices (200 g) ripened goat cheese
  • 2 Tbsp (30 ml) olive oil
  • 1 Tbsp (15 ml) dried marjoram
  • 1 Tbsp (15 ml)mango, peeled and cut into matchsticks
  • 1 cup (250 ml) Canabec game demi-glace

Instructions

  1. Brush the sliced zucchinis with the oil and marjoram and grill.
  2. Cut each bison medallion into four thin slices and brush with oil. Sear over high heat (ideally in a cast iron pan) and set aside.
  3. Heat the demi-glace sauce in a small saucepan.
  4. Assemble the tians, starting with the mango and then alternating with the other ingredients on top. Finish with a top layer of cheese and mango.
  5. Serve with the warm demi-glace sauce.
