Maple Ribs

Ingredients

  • 4 lbs (2 kg) Wild Boar Ribs inner membrane removed
  • 7/8 cup (200 g) maple sugar
  • 1/3 cup + 1 Tbsp (100 ml) oil
  • 1/3 cup + 1 Tbsp (100 ml) maple syrup
  • 3 Tbsp + 1 tsp (50 ml) cider vinegar
  • 1 Tbsp (15 ml) dried mustard
  • 4 garlic cloves, chopped
  • 3 Tbsp + 1 tsp (50 ml) chili sauce
  • 1 tsp (5 ml) ground black pepper

Instructions

  1. Make the marinade: Combine all of the ingredients, except for the wild boar ribs, in a large bowl.
  2. Boil the wild boar ribs in a pot of water for 30 to 45 minutes.
  3. Drain well and discard the cooking water.
  4. Place the ribs on a roasting plate and coat with marinade on both sides.
  5. Bake in a preheated oven at 350°F (180°C) until brown, turning and brushing regularly with marinade.
  6. Ribs are cooked when the meat pulls back from the end of the bones.
