Ingredients
3 lbs (600 g) bison filet
3 Tbsp (45 ml) butter
2 Tbsp (30 ml) grey shallots, chopped
3/4 cup (175 ml) red wine
1/4 cup (60 ml) maple syrup
1 cup (250 ml) Canabec game stock or demi-glace
1/4 cup (60 ml) 35% cream
Salt & pepper to taste
Instructions
Bison filet:
Pepper the bison filet and grill on an oiled grill over medium-high heat for 15 to 20 minutes or more, depending on the desired level of doneness. Flip a few times during cooking. Do not overcook.
Slice the filet and set aside to keep warm.
Maple syrup sauce:
Sauté the shallots in butter in a small saucepan for 2 minutes.
Deglaze with the wine and reduce by half, stirring a few times.
Stir in the maple syrup, game stock, cream, salt & pepper. Reduce by half while stirring.
Drizzle a serving platter with some of the maple syrup sauce and arrange the sliced filet on top.
Serve with the remaining maple syrup sauce on the side.
