Bison Stew

Ingredients

  • 4 lbs (1.8 kg) stewing bison
  • 3 Tbsp (45 ml) oil
  • 1 onion, chopped
  • 1/2 lb (250 g) mushrooms, sliced or cut into quarters
  • 1 cup (250 ml) carrots, diced
  • 1/2 cup (125 ml) celery, diced
  • 1 cup (250 ml) turnip, diced
  • 8 cups (2 L) Canabec game stock or beef broth
  • Salt & pepper to taste

Instructions

  1. Heat the oil in a large saucepan or Dutch oven over medium-high heat. Brown the meat on all sides.
  2. Add the broth (or water), onion, mushrooms, carrots, celery and turnip. Simmer until the vegetables and meat are tender, about 1 hour.
  3. Season with salt & pepper.
  4. If desired, add 1½ cups (350 ml) of water or cream and 1 cup (250 ml) of uncooked rice, and continue cooking for another 20 minutes for a complete meal.
