Steaks with Balsamic Vinegar

Ingredients

  • 4 ostrich medallions
  • 1/2 cup (125 ml) balsamic vinegar
  • 1/4 cup (60 ml) liquid honey, warmed
  • 1/4 cup (60 ml) olive oil
  • 2 Tbsp (30 ml) fresh basil, chopped
  • 1 tsp (5 ml) dry mustard

Instructions

  1. Place the steaks in a glass dish. Whisk all of the remaining Ingredients in a separate bowl and pour over the steaks. Marinate the steaks in the refrigerator for 2 to 4 hours, turning halfway through.
  2. Preheat the barbecue to high heat.
  3. Sear the steaks for 4 to 5 minutes per side (for rare). Brush with the marinade while cooking.
  4. Serve immediately with Roquefort mashed potatoes and steamed green beans.
