Slow-Cooker Beer-Braised Bison

Ingredients

  • 1 Tbsp (15 ml) butter
  • 1 Tbsp (15 ml) extra virgin olive oil
  • 1 Tbsp (15 ml) steak spice
  • 7 to 9 oz (200 to 250 g) buffalo flank steak
  • 3 slices bacon, diced
  • 1/2 large Spanish onion, minced
  • 2 cloves garlic, crushed
  • 1/2 cup (125 ml) red beer
  • 1 Tbsp (15 ml) Worcestershire sauce
  • 1 1/2 cups (375 ml) Canabec veal or game demi-glace
  • 3 sprigs fresh rosemary
  • Salt & pepper to taste

Instructions

  1. Melt the butter in the oil in a large skillet.
  2. Season the flanks with steak spice and sear individually over high heat for 4 minutes per side. Place in a slow cooker.
  3. In the same skillet, brown the chopped bacon. Add the onion and cook for about 15 minutes over medium heat. Season with salt & pepper.
  4. Add the garlic and cook for another 2 minutes. Deglaze with the beer and reduce for 3 minutes. Pour over the flank steaks.
  5. Add the Worcestershire sauce, demi-glace and rosemary.
  6. Cook in the slow cooker for 7 hours at medium heat.
