Sliced Ostrich with Field Berries

Ingredients

  • 400 g roast ostrich
  • 2 Tbsp (25 g) butter
  • Pinch salt
  • 2 Tbsp (25 ml) raspberry vinegar
  • 1/2 cup (70 g) raspberries
  • 1/4 cup (35 g) strawberries, chopped
  • 1/3 cup (35 g) blueberries
  • 2 Tbsp (25 g) sugar
  • 1 1/4 cup (300 ml) Canabec Game Demi-Glace
  • 1/4 cup (60 ml) 35% cream
  • Salt & ground pepper to taste

Instructions

Sauce:

  1. Melt the butter in a medium saucepan over low heat. Add the sugar and stir until melted.
  2. Add the vinegar and fruit and reduce until the sauce has thickened.
  3. Stir in the demi-glace and cream. Bring to a boil and season to taste.
  4. Set aside and keep warm.

Meat:

  1. Preheat the oven to 350°F (175°C). Sear the roast and bake in the oven for 10 to 15 minutes to an internal temperature of 136°F (58°C) for medium.
  2. Slice the roast and place on a serving dish. Spoon the sauce over top.
  3. Garnish with fresh raspberries and serve.
