Puff Pastry With Apples, Sausages and Goat Cheese

Ingredients

  • 1 package frozen puff pastry
  • 7 oz (200 g) fresh goat cheese
  • 6 to 8 large French shallots, peeled and cut in half lengthwise
  • 2 Granny Smith apples, peeled and cut into quarters
  • 4 Canabec Cooked Rabbit & Apple Sausages, sliced
  • 2 Tbsp (30 ml) olive oil
  • 2 Tbsp (30 ml) white or brown sugar
  • 2 Tbsp (30 ml) wine, cider or balsamic vinegar
  • 1 tsp (5 ml) salt
  • 1 handful fresh thyme and/or rosemary and/or parsley, chopped

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Roll out the puff pastry into a long, narrow rectangle and place on a baking sheet lined with parchment paper.
  3. Bake the pastry for about 10 minutes or until golden. Remove from the oven and spread with the goat cheese.
  4. Heat a non-stick skillet over medium-high heat. Add the olive oil and cook the shallots and apples until caramelized.
  5. Stir in the sugar, vinegar and salt, and continue cooking until the vinegar has completely evaporated.
  6. Spread the shallot and apple mixture over the goat cheese.
  7. In the same skillet, add a drizzle of olive oil and brown the sausages.
  8. Arrange the sausage slices on top of the apple and shallot mixture.
  9. Return the puff pastry to the oven and bake for another 5 minutes.
  10. Remove from the oven and garnish with fresh herbs. Season with salt & pepper.
  11. Cut to the desired size and serve.
