Wild Boar with Mushrooms

Ingredients

  • 1½ lbs (700 g) wild boar strips, filet or flank
  • 3 Tbsp (45 ml) oil
  • 3 Tbsp (45 ml) butter
  • 4 French shallots, finely sliced
  • 1 cup (250 ml) mixed mushrooms
  • 2/3 cup (200 ml) dry white wine
  • 1 2/3 cups (400 m) Canabec demi-glace
  • 1/3 cup (80 ml) sour cream
  • 2 Tbsp (30 ml) old-style mustard
  • Salt & pepper to taste

Instructions

  1. Heat the oil and butter in a frying pan.
  2. Quickly sauté the wild boar strips until lightly browned.
  3. Add the shallots and mushrooms and mix well.
  4. Add the white wine and let the mixture reduce by half.
  5. Add the demi-glace sauce and finish cooking over medium heat.
  6. Add the sour cream and remove from heat. Stir in the mustard and salt & pepper. Mix well and serve.
