Ingredients
10 oz (300 g) Soba (buckwheat noodles)
4 Canabec cooked duck, blueberry & green tea sausages, cut into a slice
3/4 cup (175 ml) mayonnaise
1/4 cup (60 ml) Kikkoman soy sauce
1 Tbsp (15 ml) honey
1 Tbsp (15 ml) sesame oil
1 celery stalk, cut into matchsticks
1 large carrot, cut into matchsticks
2 bok choy, thinly sliced
2 green onions, thinly sliced
1/2 cup (125 ml) cilantro, coarsely chopped
Instructions
Cook the Soba noodles according to the package instructions and cool in ice water. Drain and set aside.
Make the salad dressing by mixing mayonnaise, Kikkoman soy sauce, honey and sesame oil, and set aside.
Heat a non-stick skillet over medium heat and brown the sausages.
Place the Soba noodles in a large salad bowl. Toss in the vinaigrette, celery, carrot, bok choy, green onion, cilantro, basil and roasted sesame seeds.
Place salad on serving dishes and top with the cooked sausages
