Quail Egg Mini Brochettes

Ingredients
24 CANABEC quail eggs
1/3 lb (150 g) duck magret, sliced
3 Tbsp (45 ml) pistachios, crushed
Salt & freshly ground pepper
24 toothpicks
Instructions
Gently place the quail eggs in a pan of cold water. Bring to a boil and cook for 3 min.
Run the eggs immediately under cold water. Shell eggs and season with salt & pepper.
Wrap each quail egg in a slice of smoked duck magret and secure with a toothpick.
Serve with crushed pistachios.
