Indian-Inspired Basmati

Ingredients

  • 4 Canabec Rabbit & Turmeric Sausages, sliced
  • 1 1/2 cups (375 ml) basmati rice, cooked
  • 1 package Doré-Mi or any other semi-soft unripened cheese, finely diced
  • 2 Tbsp (30 ml) butter
  • 2 French shallots, minced
  • 2 garlic cloves, chopped
  • 2-inch (5 cm) piece of fresh ginger, chopped
  • 1 tsp (5 ml) curry
  • 1/2 cup (125 ml) slivered almonds, toasted
  • 1/2 cup (125 ml) dried cranberries
  • 3/4 cup (175 ml) fresh cilantro, chopped
  • 2 green shallots, minced

Instructions

  1. Heat a non-stick skillet over medium-high heat. Brown the sausage slices on both sides and set aside on a plate.
  2. In the same skillet, add the butter and cook the shallots, garlic, ginger and curry.
  3. Stir in the cooked rice, sausages, almonds and cranberries to coat thoroughly.
  4. Garnish with the cilantro and green shallots and serve.
