Elk Burgers

Ingredients
4 hamburger buns
4 Canabec elk burgers
8 slices (160 g) blue cheese
3 pears, diced
1 Tbsp (15 ml) honey
1/2 tsp (2.5 ml) vanilla extract (or a few drops of concentrate)
1 pinch aniseeds
1/3 cup + 1 Tbsp (100 ml) water
1 Tbsp (15 ml) lemon juice
Instructions
Make the compote: Combine the last 6 ingredients and cook gently for 30 minutes.
Season and cook the elk burgers over medium heat for about 4 minutes per side (do not overcook; the meat will dry out).
Grill/toast the buns if desired.
Place the burgers on top of the buns and garnish with the compote and slices of blue cheese.
Serve and enjoy.
