Quail Egg Mini Brochettes

Ingredients

  • 24 CANABEC quail eggs
  • 1/3 lb (150 g) duck magret, sliced
  • 3 Tbsp (45 ml) pistachios, crushed
  • Salt & freshly ground pepper
  • 24 toothpicks

Instructions

  1. Gently place the quail eggs in a pan of cold water. Bring to a boil and cook for 3 min.
  2. Run the eggs immediately under cold water. Shell eggs and season with salt & pepper.
  3. Wrap each quail egg in a slice of smoked duck magret and secure with a toothpick.
  4. Serve with crushed pistachios.
