Elk Burgers

Ingredients

  • 4 hamburger buns
  • 4 Canabec elk burgers
  • 8 slices (160 g) blue cheese
  • 3 pears, diced
  • 1 Tbsp (15 ml) honey
  • 1/2 tsp (2.5 ml) vanilla extract (or a few drops of concentrate)
  • 1 pinch aniseeds
  • 1/3 cup + 1 Tbsp (100 ml) water
  • 1 Tbsp (15 ml) lemon juice

Instructions

  1. Make the compote: Combine the last 6 ingredients and cook gently for 30 minutes.
  2. Season and cook the elk burgers over medium heat for about 4 minutes per side (do not overcook; the meat will dry out).
  3. Grill/toast the buns if desired.
  4. Place the burgers on top of the buns and garnish with the compote and slices of blue cheese.
  5. Serve and enjoy.
