Deer Cretonnade

Ingredients

  • 3/4 lb (400 g) Canabec Ground Deer Meat
  • 1 onion, finely chopped
  • 1/2 cup (125 ml) Canabec Game Demi-Glace
  • 1/2 cup (125 ml) 35% cream
  • 1 tsp (5 ml) salt
  • 1/2 tsp (2 ml) pepper
  • 2 Tbsp (30 ml) parsley, chopped
  • 1/4 tsp (1 ml) ground cloves
  • 1/2 tsp (2 ml) herbes de Provence

Instructions

  1. Place all of the ingredients in a small pot.
  2. Bring to a boil, stirring often to prevent the deer meat from forming large pieces.
  3. Simmer over very low heat for one hour, stirring occasionally.
  4. Place in a terrine dish or mould and allow to cool.
  5. Serve on your favourite toast..
