Bison Bourguignon

Ingredients

  • 4 lb (2 kg) stewing bison
  • 2 Tbsp (30 ml) oil
  • 3 onions, finely chopped
  • 2 packages fresh mushrooms
  • 2 Tbsp (30 ml) flour
  • 3 cups (750 ml) red wine
  • 3 cups (750 ml) water
  • 1 garlic clove, crushed
  • 1 Tbsp (15 ml) salt
  • 1 can tomato paste
  • 1 bouquet garni
  • Pepper to taste

Instructions

  1. Sauté the meat and onions in the oil over high heat.
  2. Sprinkle with flour and lightly brown. Add the garlic and cook another minute.
  3. Add the wine and water and simmer for a few minutes.
  4. Stir in the tomato paste, salt, pepper and bouquet garni. Simmer gently for 1 ½ hours.
  5. Add the mushrooms. Cook for another 30 minutes and serve.
